Oatmeal Coconut Bars (Gluten Free and Dairy Free)
This is the first time I've ever made these Oatmeal Coconut Bars. They were very simple to make. I love coconut and oats so I decided to combine them. The bars taste great and my family also enjoyed them ^_^.
Ingredients:
2 Eggs
3/4 cup Brown Sugar
1 cup Bob's Bob's Red Mill All-Purpose Flour
2 teaspoons Bob's Red Mill Gluten Free Baking Powder
4 tablespoons Canola Oil
3/4 cup Shredded Coconut
1 cup Gluten Free Old Fashioned Oats
1/4 cup Rice Milk or any other Dairy Free Substitute

Method:
- Preheat oven to 350ºF (177ºC). Grease a baking pan.
- Beat eggs in a medium-sized bowl until thick.
- Gradually add sugar and beat until thoroughly blended.
- Stir in Gluten Free flour, baking powder and oil and blend well.
- Combine Shredded Coconut and Gluten Free Oats, stirring until blended.
- Pour into pan to 1 inch in height. Spread evenly in pan.
- Bake for 40 to 45 minutes or until golden brown.
- Remove the pan from the oven and leave to cool. Then cut into bars to serve.
