Gluten Free Coconut Bake

Gluten Free Coconut Bake , a photo by gluten-free trini on Flickr. I tried to make Coconut Bake a few days ago. Coconut Bake is very popular in Trinidad and Tobago. I used to eat this a lot and I missed it a lot so I had to try and make a gluten-free and dairy-free version. They tasted okay but I didn't like the flour that I used. I will try making this again and I'll upload a recipe for it.

Oatmeal Coconut Bars (Gluten Free and Dairy Free)

This is the first time I've ever made these Oatmeal Coconut Bars. They were very simple to make. I love coconut and oats so I decided to combine them. The bars taste great and my family also enjoyed them ^_^. Ingredients: 2 Eggs 3/4 cup Brown Sugar 1 cup Bob's Bob's Red Mill All-Purpose Flour 2 teaspoons Bob's Red Mill Gluten Free Baking Powder 4 tablespoons Canola Oil 3/4 cup Shredded Coconut 1 cup Gluten Free Old Fashioned Oats 1/4 cup Rice Milk or any other Dairy Free Substitute Method: Preheat oven to 350ºF (177ºC). Grease a baking pan. Beat eggs in a medium-sized bowl until thick. Gradually add sugar and beat until thoroughly blended. Stir in Gluten Free flour, baking powder and oil and blend well. Combine Shredded Coconut and Gluten Free Oats, stirring until blended. Pour into pan to 1 inch in height. Spread evenly in pan. Bake for 40 to 45 minutes or until golden brown. Remove the pan from the oven and leave to cool. Then cut into bars to
