I found a Heat-and-Eat rice meal in Tru Valu supermarket in Diego Martin. It can be found in the aisle with the flours in the corner on the highest shelf. It is called Kitchen88 Thai Green Curry Chicken with Jasmine Rice. It is a product from Octa Foods. There are no statements on the product claiming that it is Gluten Free or Dairy Free. I decided to try it out at my own risk hoping that it would be safe. I read the ingredients list about 10 times before I bought it to make sure that I wasn't making a mistake. I tried it out and nothing happened so it got my approval. I even waited a day to see if there were any delayed reactions and nothing happened so I'm happy. The product does have allergens, such as shellfish, fish and soy. The website for the product has no information about the ingredients or nutritional value so I took pictures of the packaging. I like that the rice and the curry were in individual packs that were easy to tear. The food doesn't look as pretty as the picture but it tasted awesome. I love the flavour. The curry was slightly sweet and very spicy with strong coconut flavour and not too salty. The chicken had a great texture. I wish that the serving sizes were a bit bigger but it is enough to survive.

Coconut Drops – Gluten Free Recipe

Coconut Drops are a common baked treat found in bakeries in Trinidad and Tobago. I miss them a lot so I decided to make some. I used the Long Time Coconut Drops recipe from The Multi-Cultural Cuisine of Trinidad & Tobago & The Caribbean cookbook from Naparima Girls’ High School. I substituted the flour with the Perfect Flour Blend from Namaste Foods . I bought this flour from Be Free Foods . The flour could also be ordered Amazon . The Coconut Drops came out great, the texture and taste was good. I kept the recipe simple. Next time, I will add raisins or sultanas with less sugar so it would not be too sweet.

Gluten Free Baking Class with Moy's Gluten Free Kitchen

Yesterday, I attended the first official Gluten Free Baking Class at Moy’s Gluten Free Kitchen . It was a great experience. I received a lot of great tips and felt more motivated to bake. Each participant baked a loaf and did adaptations to the recipe. We made a non-vegan and a vegan version (without eggs). Both versions of the bread came out great. We also learnt how to bake cookies and muffins.
