Curried Goat and Potatoes Recipe - Gluten Free Trini

Today is Divali and I decided to make some East Indian food like curried goat and potatoes. For the curry, I used a hand blended curry from Abundant Harvest & Tropickle Foods. I bought the curry at the Upmarket.


Ingredients
1lb frozen lean goat meat
½ tsp black pepper
3tbsp green seasoning (chive, thyme, garlic)
Salt
2 garlic cloves minced
2 tbsp. cooking oil
2 ½ tbsp curry powder
1tsp dried thyme
2lb golden Idaho potatoes
2 cups water


Method
  1. Thaw the goat meat at room temperature. For fresh goat meat, trim, wash and cut the meat into pieces.
  2. Season the meat with green seasoning, 2 tsp salt and black pepper. Marinate for 1 hour.
  3. Heat oil in a pressure cooker.
  4. Add curry powder, minced garlic and dried thyme and fry for a minute.
  5. Add 1 cup of water, the meat and 2 tsp salt. Sauté for 10 minutes.
  6. Add more water and add the pressure cooker lid. Cook till the meat is tender. (Warning: Turn off stove and let the pot cool a bit before taking off the pressure cooker lid).
  7. Add chopped potatoes and enough water to cover the potatoes.
  8. Cook for another 25 minutes until the potatoes are cooked. Do not cover the pot.
  9. Adjust taste with salt and pepper.
  10. Serve with rice.
